I used to love Fettucini Alfredo in my cooked days, however the richness of this traditional Italian dish would invariably leave me feeling sick. This raw vegan version of this old favorite uses cashews or macadamia nuts as the base and is not only creamy and delicious but soooooo much kinder on my body!
- 1 cup cashews and/or macadamia nuts, soaked for 1 hour
- 1/2 to 3/4 cup water (depending on the desired thickness)
- 3 tablespoons lemon juice
- 1 teaspoon salt
- 1 garlic clove
Process all ingredients in a high power blender such as the Omni V 3HP blender until smooth and creamy.
Enjoy on top of Zucchini Pasta or Kelp Noodles.
