
This Corn Chowder is absolutely to live for. Sooo creamy and delicious!

Serves 2
- 1 cup fresh or frozen corn kernels
- 1 clove garlic
- 1 tablespoon onion
- 1/4 cup cashews
- 2 tablespoons nutritional yeast
Carmella’s Note
I replace the olive oil with 1/4 medium avocado. - 4 baby carrots (or 1 regular one)
- 1/4″ ring of red pepper
- 2 tablespoons olive oil
- 1/2 – 1 teaspoon psyllium (depending how thick you wish chowder to get)
- 1 teaspoon cumin
- 1/8 teaspoon nutmeg
- 1 tablespoon parsley
- 1/2 teaspoon salt or 1 teaspoon light miso
- Ground pepper to taste
- 2 cups water
Blend in a high-power blender such as the Omni V 3HP blender until very creamy.
Add :
- 1/4 cup more corn kernels
- 1 tablespoon parsley
Warm up on stove (or use hot water).
Bowl up and garnish with additional minced parsley & fresh ground pepper.
