A staple for us in the summer when there is such an abundance of cucumbers! One of the great things about raw food prep is that it’s very forgiving. Feel free to play around with the amount of avocado, lettuce, celery and parsley; it will almost certainly turn out delicious!
- 1/2 medium avocado
- 2 cups lettuce, packed
- 1 1/2 cups roughly chopped cucumber
- 1/4 cup parsley
- 2 celery stalks, chopped
- 1 green onion, chopped
- 1 garlic clove
- 2 teaspoons lemon juice
- 1 teaspoon light miso
- Salt, to taste
- Water, until desired consistency
- 1/4 cup fresh chopped dill
Blend all ingredients in a high-power blender such as the Omni V 3HP blender except fresh dill until smooth and creamy.
Add dill and process briefly only to incorporate.
